Baking cakes in an Air Fryer !

I’ve had a question from someone about baking cakes in my Ninja Foodi, so here goes !

170g Butter/spread
170g Soft brown sugar
170g Self Raising Flour
3 eggs
2 teaspoons mixed spice
1 handful flaked almonds
1 handful sultanas

Put the flour, eggs, sugar, mixed spice and butter/spread in to a food processor/mixer and mix until it looks, well, mixed….

Add in the almonds and sultanas (this can be anything you want really, I normally use what I have handy in the cupboard)

Mix on Pulse just to combine it. Too much and you’ll chop it too finely if you are using a food processor (I used a Magimix with the main blade for this)

Line a tin with greaseproof paper. In my gas oven I used to use a 2lb loaf tin (It’s what I had handy) but I have bought the loaf tin for the Ninja because my old tin didn’t fit. I also bought some greaseproof paper liners for the loaf tin and they also fit the Ninja tin so I’m guessing the capacity is about the same.

Pour the cake mix in to the tin.

I then put the tin on the lowest level of the reversible rack that came with the Ninja (shown in the photo) and put it in the main pot.

I set the Ninja to Bake/Roast at 160 C and baked it for 45 mins. I checked it after 20 mins and 40 mins. At 40mins I tested it with a skewer (poke it in to the cake and see if it comes out clean) but it needed an additional 5 mins.

As a comparison I would have baked this in an electric oven at 180 C for 40 – 50 mins and in a gas oven at gas mark 6 for 40 – 50 mins.

I didn’t bother pre-heating the Ninja.

When I took the cake out I transferred it to a wire rack to cool.

General Ninja Notes

Based on my experience so far I’ve found that I need to set the Ninja 10 – 15 C cooler than I would have done with an electric fan oven and the cooking times are slightly less.

If your air fryer doesn’t have a bake/roast setting use the air fry setting. You may need to reduce the cooking temperature and/or cooking time.

Most cookware that is safe to use in a “traditional” oven can be used in an air fryer, it is just a case of finding things that fit. As well as using metal tins I also use some of the silicone cookware.

So far I have cooked the following in my Ninja:

  • Bread rolls
  • Granola
  • Cake
  • Salmon
  • Paella
  • Chips
  • Roast potatoes
  • Cottage Pie
  • Croissants
  • Mushroom Pasta
  • Mushroom Burgers
  • Roasted Vegetables
  • Grilled Halloumi
